Red, White, and Blue Cheesecake Bars with Squirrel Bait® Granola Crust

Ingredients
Crust
- 2 cups Gatherer's Granola Squirrel Bait®
- 1/4 cup melted butter or coconut oil

Cheesecake Filling
- 16 oz (2 packages) cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream

Toppings:
- 1/2 cup strawberry preserves or fresh strawberry puree
- 1/2 cup blueberry preserves or fresh blueberry puree
- Fresh strawberries and blueberries for garnish

Instructions:
1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

2. Prepare the Crust: In a food processor, pulse the Squirrel Bait® granola until it becomes fine crumbs. In a mixing bowl, combine the granola crumbs and melted butter or coconut oil until evenly mixed. Press the mixture firmly into the bottom of the prepared baking pan.

3. Bake the Crust: Bake the crust in the preheated oven for 10 minutes, then remove and let cool slightly while you prepare the filling.

4. Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and sour cream until fully incorporated.

5. Assemble the Cheesecake Bars: Pour the cheesecake filling over the slightly cooled crust and spread it into an even layer. Drop spoonfuls of strawberry and blueberry preserves or puree on top of the filling, then use a knife or toothpick to gently swirl them into the cheesecake mixture, creating a marbled effect.

6. Bake the Cheesecake Bars: Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the bars cool in the oven with the door slightly open for about an hour. Then refrigerate for at least 3 hours or until fully chilled.

7. Serve: Once chilled, lift the cheesecake bars out of the pan using the parchment paper overhang and cut into squares. Garnish with fresh strawberries and blueberries before serving for an extra patriotic touch.
